Beef tallow is not good for human health.
… but it’s better than what was in use before. That blog link you posted is focused on one issue, saturated fats, and it’s anecdotal at best as it refers to “nutrition experts quoted” in an article on an entirely different site, so it’s not even a scientific opinion.
The issue people have more than anything else is the long list of chemicals used in frying which may or may not be linked to cancer, PFAs, etc.. A lot of people are under the ignorant assumption that restaurants are using a singular ingredient called “oil” to fry their foods without realizing those oils have a long list of chemicals within them, some of which are extremely questionable.
