Somewhat-Reticent Just like a tiny bit of sugar enables tomato sauce Taste for pasta.
Store bought canned sauce has enough sugar for me, but I will dice onions, add minced fresh garlic and browned, drained ground beef and/or Italian sausage to it. (Beef and sausage is my “lazy way” Sunday sauce sans meatballs).
When I use canned tomoes for sauce I add sugar. Fresh from the garden I don’t need to add sugar or salt. Romas make great all purpose sauce and salsa.
The best sauce I ever made is in the Spaghetti ala Bolognese recipe I found in one of Vincent Price’s cookbooks. Lots of work, but wonderful stuff 🙂
