broknsymetry Not lazy, but perhaps a bit gringo-ish, hah hah. I get anal about my Mexican cookery, I lived and loved Mexicans and Central Americans for much of my life. I also make Salvadoran Pupusas, and I make Tamales from scratch also.
the only things I can't make are proper fresh masa, I don't have the stones or lime, and I get frustrated in that I don't have a comal. I have a tortilla press and some other things though. I never don't have tortillas in here, I always have them, I panic if I don't have them.
But also, I try as best as I can to avoid processed foods, at least ultra processed foods. I can't afford organic, but I try. Most that I cook involves lots of prep, so no roasts or quick meats, meat for me is a complement in a recipe, not the main thing. My sister cheeses out and does roasts all the time and it is expensive compared to what I cook. My shopping buget is pretty small, but I'm particular with certain ethnic foods. I also don't like pre-made India curry sauces, it's just not the same as building a sauce over the process of various cooking steps.
