Actually in reality most professional pedalboards are wired in mono, yes some use a few stereo connections but those are used to feed on stage speakers such as those used by garage bands.
If a pedalboard needs different outputs for effects it will have two or more mono outputs al of which will be connected to a snake to be delivered to the FOH board (mixer) where the clean outputs can be properly mixed, then needed the effect can be blended in, after which all is then sent to PA system and as required to the monitor board.
