It’s really easy to fry catfish like Cracker Barrel’s. Our local store has fillets regularly. I buy them to fix the same day. Look for pinkish fillets, and check for freezer burn.
For two fillets I mix ⅓ cup of Indian Head brand cornmeal with 1 tsp salt and ½ tsp pepper.
I then rinse the fillets twice in cold water and pat excess water off them with a paper towel.
Then, dredge them thoroughly in the meal. Be sure to get the corn meal in the folds of the top of the fillets.
Then heat ⅓ cup of vegetable oil in a skillet with rounded edge until the oil is shimmering. I fry at 7 on my gas stove, medium-high.
Fry the fillets flat side down until the corn meal turns brown. Then flip them to the top and tilt the pan to fry the tops in the oil on the rounded part of the skillet. Switch the position of the filets so each fries in the oil when the skillet is tilted.
When done, remove the fillets to paper towel on a plate. Then plate with steamed veggies, collards, cole slaw or other sides of choice.
My lovely bride doesn’t usually like fish, but really likes this catfish.
